Mornings can be busy, but that doesn’t mean your first meal of the day should be anything less than nourishing! Overnight oats are one of my favourite ways to ensure I start the day with something balanced, gut-friendly, and packed with nutrients—without any morning hassle.
This simple, no-fuss recipe is my go-to, and I encourage you to tweak it to suit your tastes. It’s loaded with fibre, healthy fats, and protein to support digestion, energy, and overall wellness. Plus, it keeps in the fridge for up to four days, so you can prep ahead and stay on track.

Dr MC overnight oat recipe:
I’m not overly precise about this recipe. I tend to just go by eye. Play around and find what works for you and your tastes.
Half a cup of gluten-free organic oats (I’m fussy here, I buy these online in 1 kg bags)
Quarter to half a cup of yoghurt or kefir (if DF use DF alternative)
3/4 of a cup of plant milk of your choice
1 tablespoon of Chia seeds
1 tablespoon of ground flaxseed
Optional…
1 Tbs of collagen powder
1 Tbs of colostrum
1 Tbs of maple syrup or honey to sweeten.
I then top with frozen berries or whatever choice of fruit I have in the fridge.
Note if you want to use bananas, don’t add them until the next day.
These are great to pre-make as you can see in the video and will last 3 to 4 days in the fridge. You can switch up toppings to create different flavours too have a look on Pinterest for some ideas. I also like almond butter with bananas sometimes topped with flaked coconut.
